Elsa’s Ice Castle Frozen Cake

The credit for this amazing cake design goes to Artisan Cake Company, who does such amazing work!  Their outstanding tutorial is not free, but it is super fun and easy to follow. 🙂 This was my first experience using isomalt and let me just say it is was not as easy at it looks!

You’ll notice that my version of this cake differs a bit from the one in the tutorial, as I chose to go with some creative elaborate icing and gum paste snow flakes around the sides of the cake, as opposed to edible silver leafing.

I also molded a uniquely designed “cradle” for my LED lights using gum paste to create the effect I wanted behind the cake.  The castle is made to look like ice by coloring isomalt and making pieces that are then “glued” together to create a (VERY fragile) sculpture that sits on top of the cake.  It was super fun to make and the look on the recipient’s face when she saw it was truly priceless! 🙂
